The invention discloses a preparation method of moringa oleifera vinegar. The preparation method comprises steps as follows: a raw material liquid is obtained by mixing and boiling moringa oleifera leaves, sugar and water; a fermentation stock solution is obtained by adding an enzymatic hydrolysate to the raw material liquid; moringa oleifera wine is brewed by adding activating yeast for wine brewing to the fermentation stock solution for fermentation; the moringa oleifera vinegar is obtained by adding a naturalized acetic acid bacterium liquid to the moringa oleifera wine for fermentation. The preparation method has the advantages as follows: the moringa oleifera vinegar is a new variety of vinegar, used raw materials are new resource food, the resource range of the raw materials for brewing vinegar is enlarged, a lot of grain can be saved, and the vinegar can be used for cooking dishes, can be used as healthcare vinegar and has blood pressure and lipid lowering effects; the process is simple, equipment investment is less, and harmful substances are not produced during fermentation.
