Genetic modification of seed proteins

Abstract Knowledge concerning the genetic modification of seed proteins to improve their nutritional quality has advanced significantly over the past two years. Research in this area has focused almost exclusively on model systems, rather than on agronomically important plants. The extent to which genetic engineering of seed-protein genes will improve crop seed nutritional quality remains to be determined.
