CARACTERIZACIÓN QUÍMICA DE EFLUENTES DE BODEGAS

The wine industry generates an important amount of solid and liquid effluents. Solids have several commercial applications while liquids cause problems when they have to be disposed of with or without transformation. In Mendoza (Argentina) the common way of disposal is by decanting after which liquids are poured into river flows or into the soil. Either of these forms of elimination may be cause of pollution because the actual chemical components are unknown. The aim of this paper is to characterize the effluents produced during wine elaboration periods. From the physic-chemical point of view their pH, electric conductivity, OBD, OCD, chlorides, sulphates, carbonates, bicarbonates, calcium, magnesium, sodium and potassium will be determined. The incoming water is one of the determining factors of effluents composition, because it provides great amounts of anions and cationes. If used in great quantities, pH, OBD and OCD values are rather low and the effluent may be sent into the sewage system, or into the soil.
