Soybean has an important source of dietetic fiber. In clinical studies performed by the U.S. Food and Drug Administration a benefical effect on glucose and lipid metabolism is reported. In this paper the adsorption isotherm of soybean fiber tablets was obtained by exposure to constant relative humidity air until equilibrium. Mold and yeast counts as well as sensory evaluation by experts, were carried out on the product at equilibrium. The adsorption isotherm showed good fit according to the GAB model. Monolayer and critical water contents, 8,13 and 19,5%, respectively, may be used to predict the product's shelf life. The tablets showed only slight higroscopicity below the HREC content.
