Preferencias y actitudes en el consumo de diferentes tipos de queso

Spain is still one of the UE countries with a lowest cheese consumption rate, despite the great increase of the last years. Cheeses with a higher quality (ripened and semi-ripened), of which Extremadura has a varied supply, are those which have got the biggest increase in its consumption. This productions are an important support for the livestock of the dehesa ecosystem. This paper analyses the main attributes which define consumer preferences for different kind of cheeses, both from Extremadura and from other regions. The data used comes from a survey carried out to Extremaduran cheese consumers inside the research project «Extremaduran cheese market: marketing and consumption» of the MAFF's Agricultural and Foodstuffs R&D Sectorial Programme.
