Novel method for preparing sugar-substituted tangerine peel

The invention relates to a treatment process of tangerine peel, in particular to a sugar-substituted process of tangerine peel. The aim of the invention is first to decompose the bitter substances in the tangerine peel into bitterless monomeric substances in a short time by the biological decomposition technology and then to perform the sugar substitution in a vacuum gradient sugaring mode in the late stage, so as to greatly shorten the treatment process time, reduce the water of water resources and lower the environmental pollution. The invention fulfills the aim by the novel method for preparing the sugar-substituted tangerine peel which is characterized by comprising the following steps of: selecting the tangerine peel, cutting the tangerine peel into blocks, performing biological reaction of the tangerine peel to remove bitterness, compressing the tangerine peel for 2 to 4 hours, and performing low-temperature sugar substitution in the vacuum state; and performing mixing, drying, trimming and packing. By adopting the vacuum low-temperature sugar substitution, the method accelerates the conversion speed and completely overturns the conventional flowing water rinsing bitterness-removing treatment.
