The invention discloses an ultramicro bean dreg-potato moon cake and a preparation method thereof, belonging to the field of moon cake processing. The wrapper of the ultramicro bean dreg-potato moon cake is prepared from the following raw materials in terms of mass of low-gluten flour: 10%-15% of inverted syrup, 1.5%-2.5% of alkaline water, 0.02%-0.05% of a preservative, 10%-15% of edible oil, 15%-20% of ultramicro bean dreg powder, 1%-5% of egg liquid, 2%-8% of mashed potato, 0.2%-0.8% of folium perillae pulp and the balance of low-gluten flour. The stuffing of the ultramicro bean dreg-potato moon cake is prepared from the following raw materials in terms of mass of the mashed potato: 4%-6% of ultramicro bean dreg powder, 10%-15% of unsalted butter, 2%-4% of butter, 0.1%-0.4% of table salt, 0.4%-0.8% of food gum, 0.02%-0.05% of the preservative, 0.2-0.6% of the folium perillae pulp and the balance of the mashed potato; and 0.1g/lkg-0.2g/kg of acesulfame serves as a sweetening agent. The material ratio of the stuffing of the ultramicro bean dreg-potato moon cake to the wrapper of the ultramicro bean dreg-potato moon cake is 3 to 2. The ultramicro bean dreg-potato moon cake is a health Cantonese moon cake having the advantages of low sugar, high dietary fiber, moderate hardness, harmonious fragrance and low production cost.
