Meat performance of beef steers and their hybrids has been studied. It is found that young cattle of Kalmyk breed were much inferior in pre-slaughter warm carcass weight and its output as compared with the Kazakh White-Head cattle and their hybrids with Kalmyk ones. The dressing percentage of steers under study and their hybrids was about 55%. By their beefiness the Kalmyk steers and hybrids were significantly inferior to Kazakh White-Head animals of the same age. The fullness index of thigh muscles in steers of experimental groups was typical for cattle of beef breeds. The Kalmyk steers had certain advantage in this indicator 142% (the norm being 120% and higher). Crossbred steers and those of the Kazakh White-Head breed were inferior as compared with the Kalmyk ones by the thigh fullness index. All steers were characterized by inadequate for beef cattle fullness coefficient of the carcass. The value of this index was minimal in hybrids and Kalmyk steers. The results of control slaughter of Kalmyk and Kazakh White-Head steers and their hybrids indicate that the animals of all the genotypes were characterized by relatively high slaughter qualities.
