The characteristics of the composition of olive oil samples obtained by mechanical extraction from the drupes of different varieties grown in experimental fields on the riviera of the Garda lake after the frost of the winter of 1985 are reported. The data relative to the fundamental parameters used for the commercial evaluation of the quality of thr product are discussed
