Fruits and vegetables play an important role in health and nutrition, being sources of vitamine C, thiamine, niacin, pyridoxine, folic acid, minerals and dietary fibers. It is well known, also, that a diet with fruits and vegetables provides 16% of magnesium, 19% of iron and 9% of calories. Other vital nutritive substances provided by fruits and vegetables are riboflavin, zinc, calcium, potassium and phosphorus(1,2). Some components of fruits and vegetables (fitonutrients) are powerful antioxidants which modify the metabolic activation and promote the detoxification processes, and can even influence those processes that can change the course of the tumor cells. Although the antioxidant capacity can be very different in fruits and vegetables, it is better to be eaten as many and diverse as possible, instead of limiting the consumption to some specific types with high antioxidant capacity.
