Encapsulation of Sorbus L. extracts to control their technological properties

Abstract In this paper, the possibility of encapsulation of plant extracts for the creation of functional ingredients is demonstrated. As an encapsulating additive, polysaccharides konjak and guar are used. Two techniques of encapsulation are considered - spray and freeze drying. It is shown that encapsulation can significantly improve the properties of the final material
