The effect of number of sensory assessments on the accuracy of treatment comparisons in meat quality trials

Abstract The effect of sensory panel size on the accuracy of comparisons between two post slaughter treatments of pork is calculated and discussed. The presence of other replications in the trial, principally through the number of carcasses subjected to each treatment, reduces the value of a large panel. The results suggest that in most cases panels of more than about six assessors achieve little additional accuracy.
