A formulation clarifiers for use in the clarification of beer, the formulation comprising a pectin selected from the group consisting Pectin rich in methyl esters with a DE of 50 to 65%, a poor Pectin methyl esters with a DE greater than or equal to 20%, and a low amidated pectin methyl esters with a DE of 20 to 40%, and a sulfur dioxide donor, wherein the ratio of pectin to donor of sulfur dioxide is 3.5: 1 to 7.5 :one.
