The invention discloses a fruit fresh keeping technique, in particular to a strawberry fresh-keeping agent and a preservation method thereof. The strawberry fresh-keeping agent comprises a mixed solution and a calcium chloride solution, and the mass ratio of the mixed solution to the calcium chloride solution is (1-5):1, wherein the mixed solution comprises a sodium alginate solution, a sodium benzoate solution and a potassium sorbate solution. The method for preserving strawberries by using the strawberry fresh-keeping agent comprises the following steps of: soaking strawberries in the mixed solution for 1-5 min, fishing out the strawberries, soaking the strawberries in the calcium chloride solution for 5-25 min, fishing out the strawberries, airing the strawberries to remove surface water, loading the strawberries in paper boxes lined with sponge or PE (Polyurethane) fresh-keeping bags, and storing the strawberries in 4-8 DEG C for refrigeration or in a room-temperature environment. After the strawberries are soaked in the two solutions, one protecting film is formed on the surfaces of fruits so as to prevent damages caused by mutual extrusion or friction in storage and transportation processes. In addition, the effects of preventing corrosion and dehydration of strawberries can be achieved, and the storage period is obviously prolonged as compared with that of unprocessed strawberries.
