The invention belongs to the technical field of spectral analysis, and discloses a method for evaluating tobacco alcoholization quality through ultraviolet spectrum. The method comprises the following steps: extracting different polarity components of tobacco by adopting four different solvent of petroleum ether, chloroform, absolute ethyl alcohol and water, scientifically establishing a multiple regression model of ultraviolet spectrum peak area and sensory quality of the four solvent parts according to ultraviolet spectrum difference caused by different tobacco alcoholization quality, and evaluating the sensory quality of the tobacco by utilizing the multiple regression model, wherein components extracted from the four solvent parts comprise tobacco liposoluble components and water-soluble components, and the tobacco alcoholization quality can be evaluated quickly, conveniently, fast and macroscopically. The method for evaluating tobacco alcoholization quality through ultraviolet spectrum has relatively good stability and reproducibility.
