Flavor characterization of different varieties of vanilla beans

The review is a brief description to some essential oils and extracts produced in New Zealand with potential interest to perfumers and flavorists. We give examples of traditional Maori and European uses of New Zealand's unique native plants, together with some of the chemistry involved. Research and development work on introduced essential oil plants is also discussed
