Ascorbic acid content and difference of related enzyme activities in fruit of blackcurrant

【Objective】The diversity of ascorbic acid content and the differences of related enzyme activity in synthetic metabolism of different blackcurrant varieties were studied in order to provide scientific references for breeding fine varieties and identifying the accumulation law of ascorbic acid(AsA)of blackcurrant. 【Method】The fruit AsA content of30 varieties was determined using HPLC, then 8 varieties which showed great differences in AsA content and were widely used in the production were selected to determine the enzyme activity in synthesis metabolism, and differences of enzyme activity were analyzed among different varieties. 【Result】The fruit AsA content was 144.79- 345.25 mg/100 g FW, and the diversity was obvious. The varieties(Ludeke, Hanfeng) with higher AsA content showed higher enzyme activity of ascorbic acid peroxidase(APX), dehydrogenation ascorbic acid reductase(DHAR) and single dehydrogenation ascorbic acid reductase(MDHAR). The AsA content, DHAR and MDHAR had extremely significant positive correlation, and the correlation coefficient was 0.952 and 0.983, respectively. The varieties(Lisangjia, Haifeng) with lower AsA content showed lower enzyme activity. The AsA content and APX had significantly positive correlation, and the correlation coefficient was0.826. 【Conclusion】Vast differences of AsA content and enzyme activity are observed in different blackcurrant varieties,which provides references for breeding and species classification of blackcurrant.
