On the basis of scientific and practical researches it is established that honey is rapeseed (monofloral)
in terms of organoleptic, physico-chemical parameters and defining falsification, it complied with the requirements of the national standard DSTU 4497: 2005 “Honey natural. Specifications »- and
suitable for use as a food product.
As a result of determining the quality and safety of buckwheat honey (polyflora) were
deviations from the sanitary and hygienic requirements according to the mechanical indicators were established
contamination, diastasis numbers and the presence of a natural honey pad, and therefore honey is not
meets the requirements of national standard DSTU 4497: 2005 and is considered to be conditionally applicable
for human nutrition
In determining the quality and safety of honey sunflower (polyflora) found that
deviations from most hygiene requirements not found, but honey contaminated
mechanical unwanted impurities - hair, and therefore does not meet the requirements of DSTU 4497: 2005
and is to be rejected.
For the first time, for the express determination of sanitary assessment of honey quality, it was applied
POCKET-PAL-3 refractometer (Poland). Which makes it possible to determine the dry mass fraction
substances with a subsequent subtraction of the mass fraction of water and its falsification.
