Method for rapidly maturing pickles

The invention discloses a method for rapidly maturing pickles. The method comprises the following steps of: S1, pre-processing: cleaning vegetables, cutting into small pieces, and fixing; S2, preparing dipping liquor: filtering vegetable fermentation liquor by using a gauze, adding active carbon into filtrate, filtering again after decolouring and deodorizing, and concentrating the filtrate or blending till the salt content is 10-20% so as to obtain the dipping liquor; S3, dipping: dipping for 2-4 h after mixing the dipping liquor with the vegetables, and replenishing water to adjust salinity; S4, fermenting: inoculating lactic acid bacteria in a pickle jar, and fermenting to obtain ejected vegetables; S5, preparing flavoured table liquor: heating plant oil till the plant oil is boiling, then, cooling, adding dried and crushed pickle accessories to fry while stirring for 1-3 min, and filtering the fried pickle accessories to obtain the flavoured table liquor; and S6, blending: compounding the flavoured table liquor, the pickle dipping liquor with the ejected vegetables so as to obtain matured pickles. The method disclosed by the invention is simple to operate, easy for industrialization and short in pickle maturing time.
