Oil samples obtained from different cultivars of olive tree grown in experimental fields on the riviera of the Garda lake after the frost of the winter of 1985 have been studied . The parameters used to define the state of quality/freshness of these oils and their attitude for preservation have been evaluated. The values of the free fatty acid, of the peroxide number, of the spectrophotometric UV absorbance, of the diglycerides content and of the sensory analyses assayed both by panel test and by expert taster are reported
