The frequency of the salmonela was evaluated in poultry carcasses and the effectiveness of its isolation in different enrichment and selective media. Ninety one broiler carcasses were taken directly from the processing line of two slaughter houses (Zulia state, Venezuela). For the isolation, enrichment and selective media were used. Enrichment media included Selenite Cystine Broth (SCB) and Tetrationate Broth (TTB). The selective media used, were Bismuto Sulfito Agar (BSA), Xylose Lisine Desoxicholato (XLD) Brilliant Green (BG) and Salmonella Shiguella Agar (SSA). Each enrichment media was combined with all four selective media, resulting in 8 different media combinations per sample. The statistical analysis was carried out using the general lineal procedure of S.A.S., and the arccosine transformation of the percentages. The lineal model included the effects of week(time), enrichment media, selective media and the interaction between the two media. Of the 91 carcasses 21 resulted positive for isolation of salmonela (23.08%). Of all the cases that resulted positives by serology for salmonela, S. enteritidis and S. typhimurium were identified in 4 carcasses each. Salmonela from the C2 group and the other unclassified salmonelas were also isolated. A significantly greater (P 0.001) isolation percentages was obtained when TTB (8%) was used compared with SCB (1%). No significant differences were observed among selective and differential media, although higher isolation percentages were obtained when using the XLD and BSA media. This study confirms the presence of salmonela in poultry carcasses, specifically S. enteritidis and S. typhimurium. The TTB media resulted in greater isolation percentages than SCB media.
