Les plantes à oxalates et leur toxicité

Resume Cette synthese a pour objet le recensement des differentes plantes riches en oxalates couramment ou accidentellement consommees. En effet, l a connaissance de l'ensemble de ces plantes permet de prevenir les cas d'intoxication que peut causer leur ingestion. La liste detaillee des plantes mentionne leurs teneurs moyennes en oxalates et leur localisation dans la plante. Des plantes regulierement consommees par l 'homme ou les animaux, comme le taro (Colo casi a esculenta L. Schott), les feuilles d 'oseille (Rumex sp.) et l'epinard (Spina ce a olera cea L.) contiennent une teneur elevee en oxalates par rapport aux autres plantes. Cette quantite varie de 2,05 a 4,21% MS pour le taro alors qu'elle est de 2% pour l'oseille. Les especes des genres Di ef!en ba chia et Philodendron habituellement commercialisees et connues comme plantes ornementales ou d'interieur, presentent des grandes quantites d'oxalates pouvant constituer un poison pour les humains (surtout chez les enfants) et pour les animaux de compagnie (chats, chiens...) qui en consomment accidentellement. Abstract The aim of this review was to list the plants containing oxalates which are usually or accidentally consumed. lndeed, the knowledge of ali these plants could contribute to reduce the cases of poisoning following their ingestion. The detailed list of these plants mention their oxalates contents and the poisonous parts. Plants regularly consumed by human and animais like the taro (Colocasia esculenta L. Schott), the leaves of Rumex sp. and the spinach (Spinacea oleracea L.} were containing high oxalates levels in comparison with other plants. The amounts of total oxalates varied from 2.05 to 4.21 % DM for the taro whereas it was 2% DM for the Rumex sp. Sorne plants like Dief!enbachia sp. and Philodendron sp. which are usually marketed and known as ornemental plants, present great amounts of oxalates which can constitute a poison for the human beings (especially for children) and pets (cats, dogs) who consume it accidentally.
