Green grass jelly is a hydrocolloid derived from leaves of green grass jelly plant
(Cyclea barbata Myers ) is commonly used as a refreshment drink. The component of
green grass jelly leaves containing carbohydrates, polyphenols, saponins, flavonoids,
fat, calcium, phosphorus, vitamin A and vitamin B. The content of bioactive
compounds that have a functional role in helping to prevent disease and improve
health . Functional Efficacy of green grass jelly in between antioxidant, antitoxic, antibacterial,
anti-cancer,
anti-
malaria, anti-hypertension and immunomodulator.
