Analysis of Nitrite and Vitamin C Contents in Vegetables Sold in Chongqing

The contents of nitrite and vitamin C in 5 types of 21 kinds of vegetables sold in Chongqing were measured and analysed.The results indicated that,in 21 vegetables,the qualified rate of nitrite was 95.24 % and the content of nitrite was generally under 1 mg/kg.There was a great difference of nitrite content in different vegetables,that from high to low was in following order:leafy vegetablesfruit vegetablesroot vegetablesflower vegetablesmelon vegetables.Among the vegetables which were sold in Chongqing,the content of vitamin C in flower vegetables,fruit vegetables and leafy vegetables was generally higher,however,it was relatively lower in root vegetables.Through the correlation analysis,the results showed that,harmful nitrite content gradually increased but useful vitamin C reduced with increasing storage time.Therefore,for our safety and healthy,it was suggested that consumers minimized the storage time of fresh vegetables and consumered scientifically and reasonably in order to reduce nitrite and increase vitamin C.
