Isolation and Indentification of Streptococcus Lactis Strains with Higher Yield of Exopolysaccharide

Several Lactic acid bacteria were isolated from fresh milk,fresh vegetables and fresh green grass in the reseach.Two strains of these Lactic acid bacteria,PB1 and PB6,with higher yield of exopolysaccharide,were established and confirmed by milk coagulation,physiology and biochemistry and endurance test to be S.Lactis,and the strain with highest potential to yield exopolysaccharide was identified as S.cremoris.
