The advance to acquiring a common quality standard for hygiene during pig-slaughtering in Westfalen-Lippe is described. Based on the laboraty results the formation of the standard and the realisation in practice is represented. The results of the regular weekly check in five slaughterhouses during a period of eight years are introduced and the conclusions are discussed.
