Presencia de hidrocarburos aromáticos policíclicos en los alimentos que forman la dieta de distintos países europeos

Food is a significant source of polycyclic aromatic hydrocarbons (PAHs). This could stem from contamined soils, polluted air and water as well as thermal treatments which are used in the preparation and cocking of food and also some preservation techniques such as smoking. In this work some studies about the presence of PAHs in total diet samples of three european countries were analyzed. The results point out that special attention should be paid to the presence of PAHs in both oils and fats and the cereals groups since these foods represent a high percentage of the diet and accordingly can be an important source of PAHS.
