METHOD FOR PRODUCING γ-AMINOBUTYRIC ACID

PROBLEM TO BE SOLVED: To provide a method for producing γ-aminobutyric acid which is a functional material from an alcohol fermented material and the like, a method for producing a food or a feed including the aforesaid method in a production process and the food or the feed containing γ-aminobutyric acid. SOLUTION: This method for producing γ-aminobutyric acid is to act lactic bacteria having ability to produce γ-aminobutyric acid to a raw material selected from a material obtained by alcohol fermentation or a post-treated material of the same. This method for producing food or feed includes the aforesaid method for producing γ-aminobutyric acid in a production process. In acting lactic bacteria, glutamic acid and/or its salt may be added to the aforesaid raw material in <=30 w/v%.
