One of the coconut commercial products is VCO (Virgin Coconut Oil). In the coconut oil processing unit, produce by-product such as coconut residue and coconut shell. By side product such as coconut shell charcoal and coconut cookies, hopefully increase the added value of VCO product. The research was conducted in laboratory of west java BPTP and food laboratory of Pasundan University, Bandung. The ssessment was conducted with two pharameter and three replicate. Product was analyzed based on physic and chemical parameter with T test differenciate. Organoleptic analize through 30 panelist with pharametric methode. The assessment resulted charcoal composition 2,77% water content, 2,39% ash content and 1,67 mm thickened charcoal. Charcoal was resulted followed by standard. Coconut VCO residue has composition 13,2% water content, 1,02% ash content, 28,14% fat content, 8,43% protein content, 9,22% dietary fiber, 40% carbohydrate and 446,9 cal/ 100 gram calory. Based on organoleptic analysis resulted new cookies coconut VCO residue preferer with panelist. While cookies coconut VCO residue has composition 3,05% water content, 1,43% ash content, 7,10% fat content, 8,67% protein content, 9,22% dietary fiber, 70,52% carbohydrate
