The Handbuch fur die Fleischerpraxis (handbook of the butcher's trade) written by W. KLEY in 1908 represents an interesting and at the same time informative contribution to the history of the catering trade in Germany. The headquarters of the company Aschinger, at that time the largest hotel and restaurant business in Berlin, are described in an extremely impressive manner. This was the main motive for reprinting the text in its original version in this article, which furthermore explains the text and sets it in a historical context. Special consideration was granted the pecularities of the catering trade at the beginning of the 20 th century.
