Active biofilms for food packaging applications

2021
Abstract In recent years, there has been great interest in developing and using biodegradable packaging materials characterized by remarkable and unique biological, mechanical, and thermal properties for new food packaging. This new packaging plays a vital role in food preservation, shelf-life extension, and reduction of environmental problems related to the use of synthetic plastics. The active biofilms derived from biopolymers and reinforced through different nanofillers such as mineral clays and fibers have been considered as an alternative solution to replace synthetic plastics in food packaging. In this context, this chapter summarizes recent advances and information on active biofilms based on biodegradable polymers and highlights the biological and mechanical effects of different nanofillers used. It also discusses the potential of these biofilms in food preservation and food engineering.
