Carrot ( Daucus carota ) Oils

Abstract Carrots are a very popular vegetable. They are rich in carotenoids, the precursors of vitamin A. Lycopene, a well-known product of tomatoes, is also a carotenoid. Anthocyanins are present in a variety of carrot that is purple in color. Alpha-tocopherol (vitamin E) and polyacetylenes including falcarindiol, falcarindiol-3-acetate, and falcarinol are also present in carrots. Carrot essential oil from the seeds, roots, and flowers as well as from localities may differ in composition.
