The chemometric methods developed over the last 20 years have become essential today. Indeed, in the case of wine analysis, such techniques can help to improve wine assembling, they allow us to extract information from a complex analytical signal to determine certain constituents, and to combine different data in order to ascertain the origin of a wine.
