Dietary fat supply is only one of several factors, which determines fatty acid composition of body lipids1,2. Research work of the last years showed that the incorporation of different fatty acids in plasma3 and membrane lipids is a slow and controlled process4, in which preferences for certain fatty acids can be found5. Moreover it has become clear that a competition exists between certain polyunsaturated fatty acids for incorporation into body lipids6. Thus the amount of fatty acid supply determines not solely the composition of body fat.
