The invention relates to potato healthcare vinegar. The potato healthcare vinegar is characterized by comprising the following production raw materials in percentage by weight: 80 to 90 percent of potatoes and 9.5 o 19.5 percent of rice hulls. A preparation method of the potato healthcare vinegar comprises the following steps of: treating the raw materials through a low-temperature double fermentation process; adding the raw material of the potatoes and the rice hulls and 0.3 weight percent of wine raw material glucoamylase into a tank for fermentation; adding 0.15 weight percent of bear dry yeast and 0.05 percent of acetic bacteria to perform secondary fermentation; and performing soaking and filtering to obtain the potato healthcare vinegar. The potato healthcare vinegar is developed from Qinghai-Tibet plateau special local products, and has the advantages of having a functional element protection effect, containing various microelements needed by a human body, such as anthocyanidin, vitamins C, B1 and B2, vitamin pp, dietary fibers, calcium, phosphorus, iron, amino acid and the like, and having good mouthfeel and flavor. The potato healthcare vinegar enriches the table vinegar commodity market to realize diversification of the table vinegar commodity market, and meets requirements of consumers; and the preparation method is simple, convenient to operate and low in cost, and the raw materials are easily obtained.
