Biological macromolecules for nutrients delivery

Abstract There is significant interest in the food industry in fortifying foods with health-promoting bioactive substances (nutrients). However, the incorporation of these nutrients into foods is often challenging because of their low solubility, poor chemical stability, poor food matrix compatibility, adverse flavor profile, or low bioavailability. Considerable research and development efforts have been made to design and fabricate delivery systems for these nutrients. This chapter focuses on the types of nutrients that need to be delivered, the biological macromolecules that can be used to construct edible delivery systems, the most common delivery systems currently used for this purpose, and some of the major challenges that must be addressed in the future.
