Perbandingan Jumlah Koloni Bakteri Kontaminan pada Es Balok dan Es Kristal di Pabrik Es Batu dan Penjual Minuman Sekitar Unisba

Ice cubes are food products commonly consumed in Indonesia as tropical country. There two types of ice cubes, ice block and ice crystal. There are quality difference between ice blocks and ice crystal due to differences in packaging and distribution of both types. The study was conducted to identify the comparison between bacterial colony count and fecal Eschericia coli count that are contaminating the ice blocks and ice crystal in an ice cubes factory and drink stalls around Unisba. The study was analytical laboratory research. Samples were collected from one ice cube factory and from 10 drink stalls around Unisba. Three ice blocks and three ice crystals were taken from ice factory and 9 ice blocks and 21 ice crystals were taken from drink stalls around Unisba. Laboratory study was conducted to measure and to compare total plate count (TPC) of bacterial contaminants and fecal Eschericia coli. The study showed that total plate count of bacterial contaminants in ice blocks taken from  ice cube factory was 6,23x10 3 and from drink stalls was 9,00x10 3 . TPC of ice crystal taken from ice cube factory was 2,76x10 4 , regular ice cube taken from drink stalls was 0,92x 10 4 . Contamination of fecal E. coli in all samples was 0,00 APM/g. This research shows that there are no difference between TPC of ice blocks taken from ice cube factory and drink stalls. TPC of bacterial contaminants in ice crystal taken from drink stalls showed a low count compared to TPC of regulare ice cubes taken from ice factory. There were not E. coli contamination found in this study.
