Currently the consumption of fruit has a very important role at the time of obtaining a balanced and healthy diet, which is based on the contribution of vitamins, minerals, fiber, water and other nutrients that are essential for the proper functioning of the body, being thus the elaboration of yogurt one of the best ways to conserve the properties of the fruits of a suitable form for the human consumption, has thought about the alternative to take advantage of the nutritional advantages that gives us the prickly pear to elaborate yogurt of this fruit. For this reason, the present titration work is part of a "Feasibility Project for the Creation of a Producer and Marketing Company of Tuna Yogurt in the City of Loja", which aims to institutionalize as a company, generate sources of employment and At the same time, it becomes a benchmark of entrepreneurial initiative with a view to extending itself to the provincial, regional and national level, which satisfies each and every one of the needs of consumers in terms of acquiring healthy products. The main objective of the present project is to carry out a feasibility study to implement a production and marketing company of tuna yogurt in the city of Loja; In addition, there are 5 specific objectives that include the preparation of a diagnosis of prickly pear production in the province of Loja, carrying out a market study, determining technical feasibility, as well as carrying out a financial study and a financial evaluation. For the development of the project, methods were applied such as: inductive, deductive, descriptive and analytical, in addition to establishing the population of 53,868 families; urban population of the city of Loja, with a sample of 381 families; plus techniques such as: direct observation, surveys and interviews to collect necessary information from future consumers of the product and objective figures of the level of supply that exists in the market. 5 In terms of results, through the diagnosis of prickly pear production it was established that this fruit is currently produced wild in the cantons of Chaguarpamba, Catamayo, Paltas and Macara; As for the analysis of the surveys, in the market study it was determined that the potential demand that consumes yoghurt is of 95.80%; the actual demand of 98.08%; and in terms of effective demand, 84.92% was obtained; with a family consumption of 65 liters per year and an unsatisfied demand of 989,332 liters. In the technical study the installed capacity was determined, used; the sector suitable for the company was also established in terms of the macro and micro location, as well as the technological components that will be used in the preparation of the yogurt, in addition the flowcharts of processes were developed, and the distribution and installation of the company was specified ; so that it is constituted under the name "FICUS CIA. LTDA "with its respective organizational structure. Regarding the financial study and the financial evaluation, the project requires an investment of $ 65,090.59; It will be financed 51% with its own capital and 49% financed by BanEcuador; the price of the product will be $ 1.85 cents per unit of one liter with 20% profit, the net present Value is $ 15,668.89; the Internal Rate of return of 22.83%, in the Benefit Cost Ratio the profit will be 22 cents for every dollar invested; The Capital Recovery Period is 4 years, 5 months and 22 days; with a sensitivity analysis of 7.86% in increase in costs and a decrease in revenues of 7.47%, So finally with the diagnosis of the production of prickly pear in the province of Loja and the market, technical, economic and financial evaluation studies, it is concluded that the present project is feasible and its execution is recommended, because it has a broad market and is economically profitable from the start of its operations.
