Uvaia pulp: obtaining a functional product by ultrasound assisted extraction and reverse osmosis

Aqueous ultrasound assisted extraction, followed by reverse osmosis were used to concentrate the bioactive compounds of Uvaia pulp. The ideal extraction conditions were obtained at a temperature of 40 °C, 10 min and 40% amplitude. After extraction the product was concentrated by reverse osmosis, obtaining relatively low fouling (31%). The product obtained showed an increase in bioactive compounds when extracted by ultrasound and concentrated by reverse osmosis. Fourteen compounds were identified by UHPLC-MS/MS. The concentrate was 3.7 times higher in phenolic content (189.542 mg GAE/100 g); and the concentration of total flavonoids was increased by 6.5 times (207.870 mg/100 g). In total the concentrate was 7.0 times higher in antioxidant activity. Finally, the concentrated Uvaia pulp showed potential to be used as a functional product, in the development of new food matrices, or in nutraceuticals and cosmetics.
