The invention discloses a chocolate ice cream, which is composed of three layers, wherein the upper layer and the lower layer are composed of chocolate slices, and the middle layer is made of ice cream. The manufacturing technology of the chocolate ice cream comprises the following steps: (1) preparing raw materials, homogenizing, aging, and solidifying; (2) injecting chocolate liquid with a temperature of 35 to 45 DEG C into a recessed groove in a tray; (3) extruding a milk material from a horizontal extruding nozzle, evenly spraying the milk material on the chocolate in the recessed groove, blending the milk material with the chocolate liquid, freezing the mixture so as to obtain the chocolate slices from which the lower layer of the ice cream is prepared; (4) extruding a chocolate material from a horizontal extruding nozzle so as to form the chocolate slices from which the upper layer of the ice cream is prepared; (5) cutting, inserting sticks, freezing, demoulding, packaging, and finally storing in a refrigeration house. The chocolate ice cream can be produced by continuous industrial production. In the prior art, solid chocolate should be purchased at first, then the solid chocolate is used to produce ice cream in a production line, this technology is complicated, thus secondary pollution to the chocolate is evitable, the preparation method provided by the invention solves the problems mentioned above, and moreover the costs on labor and transportation are saved at the same time.
