Installation for producing domestic hot water comprises a device (40) for measuring the flow (QECS) of hot water draw-off in the circuit (11,14) for producing hot water, a device (30 ) for measuring the temperature (Ts) of the domestic hot water outlet of the heat exchanger (13) and a system (100) for controlling the modulating valve (20) itself comprising a module (102 ) of closed loop control of the modulation valve (20) from the temperature (Ts) measured by said device (30) for measuring temperature and a set temperature (Tc), a module (103) direct control proportional to the modulating valve (20) from the information (QECS) provided by the device (40) for measuring drawing rate (QECS), and a module (104) of pulse control of the valve modulation (20) from the flow rate variations detected by the device (40) for flow measurement, the e module (104) of pulse control signal producing creating a peak burner gas feed rate (12) by the modulating valve (20) every sudden significant change in hot water drawing rate (QECS ) measured.
