ALLXIN, A STRESS COMPOUND FROM GARLIC

A new stress compound, names allixin, was isolated from garlic, bulbs of Allium sativum L, and the structure was identified by NMR and MS spectrometry as 3-hydroxy-5-methoxy-6-methyl-2-pentyl-4H-pyran-4-one.
