Investigation on the Measures to Improve and Stablize the Quality of Low-alcohol Liquor

The stabilizers including gum acacia, β-CD and HP-β-CD were added in Fen Liquor respectively and then the esters content in the liquor was determined by GC in different storage time. The determination results suggested that the addition of stabilizers could inhibit the hydrolysis of estrer compounds and improve the quality of low-alcohol liquor.
