The invention discloses a fruit and vegetable juice three-extraction new process and relates to the field of processing industry of fruit and vegetable juice. A squeezing process is as follows: 1) on the basis of keeping the original squeezing process unchanged, the third squeezing is increased on the flow process of the first squeezing and the second squeezing; 2) raw juice obtained by adding water into fruit and vegetable residues after the second squeezing for dissolving the fruit and vegetable residues is taken as a raw material for the third squeezing; 3) the water adding quantity for the fruit and vegetable residues after the second squeezing is appropriately regulated according to the content of the raw juice in the fruit and vegetable residues after the third squeezing so as to enable the content of the raw juice in the fruit and vegetable residues after the third squeezing to achieve the requirements. According to the new process disclosed by the invention, the concentration of fruit juice can be effectively improved by increasing the third squeezing on the basis of the original processing process and recycling the raw juice of the third squeezing, the consumption of multiple items, namely water energy, electric energy, time and the like can be further reduced, the loss of the raw material can be reduced, the production energy consumption can be reduced, and the production benefits can be improved.
