Food Engineering, Fruit and Vegetable Postharvest: A Review

The study presents a documentary review about the scientific production of the variable Postharvest of Fruits and Vegetables published during the decade between 2010-2020 in Latin American countries with the purpose of analyzing, from a bibliometric approach, the publication of research papers on the proposed topic to highlight the main characteristics such as the historical evolution of publications, classification by country of origin, area of knowledge and participating authors. Likewise, some case studies are analyzed from a qualitative perspective with the purpose of identifying the position of different authors regarding food engineering techniques, specifically in the postharvest of fruits and vegetables, focusing on the application of knowledge in the Latin American context, with emphasis on the case of Peru. The search for published documents yielded a result of 181 research papers, which were classified by means of the parameters explained above through tables and figures for their subsequent interpretation and construction of the conclusions.
