Food should be harmless and safe, and should be taken in sufficient amounts, in order to attain a good life quality and secure physical and mental wellfare to individuals and their families. A sanitary evaluation of foods is neccessary for that purpose, by checking their composition and their safeness, from both microbiological and toxicological viewpoints. Results after sanitary evaluation of Cuban foods, by Food Sanitary Register during 1997 and 1998 are presented in this article. Foods are classified according to their nature, and information about total number of foods presented for registration and causes for occasional rejections is presented. Based on results, conclusions are withdrawn and some recomendations are suggested.
