The invention relates to a preparation method of polysaccharide of tree peony seeds. The method is characterized by comprising the following steps of: by taking dry powder of tree peony seeds with oil extracted as a raw material, extracting polysaccharide of tree peony seeds by using water as a solvent; performing solid-liquid separation to obtain an extracting liquid containing seed polysaccharide; adding ethanol into the extracting liquid; uniformly mixing and standing for a while at low temperature; centrifugalizing; removing supernate; collecting crude polysaccharide; removing proteins and small molecular impurities; and dehydrating to obtain the polysaccharide of tree peony seeds. The polysaccharide of tree peony seeds produced by the preparation process is shallow in color and good in water solubility, and has better oxidation resistance through test.
