Relationship between storage property and cell wall components in apple during fruit development.

Five apple cultivars,'Fuji','Ralls','Starking delicious','Golden delicious' and 'Gala',were used as materials to analyze the changes of cell wall material(CWM),water soluble pectin(WSP),covalently bound pectin(CSP),ionic bound pectin(ISP),hemi-cellulose and cellulose during fruit development and maturation.The results showed that cell wall material content of the five apple cultivars were increased at first and then decreased,and their decline turning point were at fruit expanding process.The content of total pectin was dropped gradually,and CSP was the main component among three pectin components.Among five apple cultivars,CSP was the highest and WSP was the lowest in 'Fuji' and 'Ralls',and the contents of WSP,CSP and ISP were middle in 'Gala' and 'Starking delicious',but these were the lowest in 'Golden delicious',which had little change.However,WSP in 'Golden delicious' and 'Starking delicious' gradually increased with fruit maturation.The changes of hemi-cellulose in five apple cultivars had similar trends,and the peaks in 'Fuji','Ralls' and 'Golden delicious' were higher than those in 'Starking delicious' and 'Gala'.In comparison with the fruit cellulose content in five apple cultivar,it was higher in 'Ralls' than those in other four cultivars at early stage,and there was little change in cellulose content in other four cultivar.
