The invention discloses a preparation method of a garcinia xanthochymus jelly. The method comprises the following steps: wahsing high-quality garcinia xanthochymus clean; soaking the washed high-quality garcinia xanthochymus in saline water, and denucleating; and taking out and draining for use, wherein the garcinia xanthochymus jelly is prepared from the following raw materials in part by weight: 80-120 parts of garcinia xanthochymus flesh, 15-25 parts of white granulated sugar, 0.5-1.0 part of carrageenan powder, 0.2-0.5 part of konjac glucomannan powder, 0.1-0.5 part of citric acid, 0.1-0.2 part of edible essence and 400-600 parts of purified water. The product prepared by the invention has the effects of clearing heat, detoxicating, beautifying, promoting appetite and production of body fluid, relaxing bowel and the like; the jelly has good elasticity and better mouthfeel; the bleeding of the jelly is reduced and the shelf life is prolonged; a new means for the fine processing as well as development and utilization of the garcinia xanthochymus is provided; the product formula and the process method are simple and easy to implement; the cost is low; and the implementation and industrialization are easy.
