Some chemical characteristics of edible wild rhubarb species (Rheum ribes L.).

Edible wi ld rhubarb samples us ed in t his study were collected from six ci ties ( Aðrý, Bitlis, Erzurum, Hakkari, Muo and Van) located i n Eas tern Anat olia Regi on. In t his research some c hemical characteristics (solid content, ash, nitrogen, protein, crude fiber, soluble solid content, total sugar, inverted sugar, saccharose, acidity, pH, vitamin C content) and s ome mineral (Fe, Zn, Pb, Cu, Mn) contents of edible wild r hubarb ( Rheum ribes L.) w ere determined. Chemical contents as mean value of all samples were found as follows: Average total solids 5.589%, ash 0.636%, nitrogen 0.206%, crude protein 1.292%, crude fi ber 1 .798%, soluble so lid content 3.897%, total suga r 1 .760%, inverted sugar 1 .643%, saccharose 0.112%, acidity 0.967%, pH 3.566, vitamin C 5. 196 mg/100g, Fe 3.752 µg/g, Zn 1.132 µg/g, P 411. 2, Pb 0.016 µg/g, Cu 0.50 1 µg/g and Mn 0.42 3 µg/g.
